Kale, a "Super Food" is one of the most nutrient rich foods in existence. Kale contains vitamin A, vitamin K, vitamin C, vitamin B6, manganese, calcium, copper, potassium, magnesium, vitamin B1, vitamin B2, vitamin B3, iron and phosphorus, which boosts athletic ability. The fiber contained in kale can play a role in lowering anxiety and stress.
Kale, much like spinach is great for heart health and lowering cholesterol. Kale has lutein and zeaxanthin compounds which help with eye health. This vegetable contains the recommended amount of vitamin K, making it one of the primary sources of this vitamin. According to studies kale has several compounds that have shown to reduce the risk of certain cancers.
“Kale is loaded with antioxidants. These antioxidants are known for their anti-viral, anti-inflammatory, anti-depressant and anti-cancer effects”.
Fun Fact: WWII American soldiers were fed kale in the battlefield!
